  1. My dad was from Texas and this was one of his favorite sides.  It is really easy.  (Of course in the old days our parents cooked with a lot of lard and or Crisco).

    1 pound okra

    cornmeal

    lard

    salt and pepper

    Wash okra, cut off stems and cut diagonally into 1/4 inch slices. Sprinkle with salt and pepper, then dredge in cornmeal, tossing and turning the okra in the meal until thoroughly coated. Heat 1/4 inch lard in a heavy skillet, the size depending on the quantity of okra. Add okra and fry over moderate heat. When the pieces on the bottom are brown, turn with a spatula so the rest can brown evenly. When done, skim out with perforated spatula. Drain on paper before serving.


  2. Fried Okra

    Fried Okra Ingredients:

    1 lb fresh okra

    1/2 cup self rising flour

    1 cup self rising cornmeal

    1 cup vegetable oil for frying



    Fried Okra Method:

    Wash the okra in cold water and dry with paper towels. Remove the tops and stems and cut the pods into 1/2 inch long pieces. Mix the cornmeal, flour and salt together in a mixing bowl and add the okra.

    Stir the okra and cornmeal mixture together making sure to completely coat the okra pieces on all sides and then let it stand for a few minutes and then stir again. Once the okra is completely coated shake the bowl to allow the left over breading to settle to the bottom.

    Heat the vegetable oil over medium high heat in a large frying pan. Place the breaded okra into the pan fry until browned on all sides. Remove the Fried Okra from the pan and drain on paper towels before serving.

  3. First you'll need a few Items.

    Large Bowl

    Cookie Sheet

    1-2 eggs

    1-2 cups flour

    Salt & Pepper

    Okra

    Hopefully your Okra is fresh. Rinse it off and make sure it's dry before you proceed on to the next step. Cut the Okra into bite size pieces and set aside. Now, using the large bowl, crack an egg into it and wisk it till it's almost foamy. Next, sprinkle a little salt & pepper into the egg mixture. Slowly, add the Okra and stir gently till it's covered with the egg mixture.If you don't see any excess egg mixture floating around then your OK. If it looks a little dry add a little more egg. Once you've gently stirred the Okra and it looks wet but not too wet then your ready for the next step. Slowly add flour while gently stiring till each Okra has a nice light coating of flour on it. Using a spoon W/ holes or another type of kitchen tool with holes or slots is OK also. Scoop out the Okra and lightly shake off any extra flour and set aside on a lightly floured cookie sheet without stacking them on top of each other. Now all you have to do is fry them the way you want.


  4. Cut into bite sized pieces, use your favorite batter, and fry in hot cooking oil.  Can not tell you how long, just try a few pieces to start, you will get the hang of it, it will be yummy.

Drain; roll okra slices in cornmeal seasoned with salt and pepper until well-coated. Fry in a deep skillet in about 1/2-inch of hot oil until browned and crisp. Drain on paper towels and serve hot.

    2 to 4 servings.
