  1. You do know that food in commercials is usually disguised to make it look better, right? Or isn't even real, like using mashed potatoes to look like vanilla ice cream? Those pancakes are probably painted, or color-corrected on the computer.

Anyway here is a great recipe for pancakes that turns out golden brown-ish for me, from Alton Brown on Food Network.

  2. The next best thing to home made pancakes is Krusteaz Pancake & Waffle Mix.  The first side down is usually always evenly brown unless your pan is to hot then it will be to dark, maybe even spotty.  Once it's flipped the other side will always be spotty so that's why it goes face down on the plate.

Color of the pancakes is all in the temperature.  A drop of water should "dance" in the pan before evaporating.  If it just sort of sizzles the pan is to cool and you won't get that nice golden color before it's ready to flip.  If the water skitters in the pan and evaporates immediately, it's to hot and the pancake will be dark and spotty looking, and the top will still be wet when you have to turn it, resulting in a pancake with a bordered edge!  Just plan to sacrifice the first pancake as the test one and make temperature adjustments accordingly.

I make pancakes on my cast iron griddle, and it took a lot of trial and error to get it just right.  My Presto non stick electric griddle is more forgiving and easier since the temp. can be set at the required level, but I like a challenge!

    Practice makes perfect!

Food on TV and in magazines are touched up by a food artist.

  3. Ladlesome batter into a fry pan and just smooth out the top (the side that is not facing the hot fry pan) out with a spoon so that none of the bubbles would form and it would be evenly coloured. Then flip it

  4. or you can cook 50 and pick the best looking three.

try varying the time on the griddle, and keep track of which time gives the best results. you can also vary the griddle temperature and keep track of that too. once you find out which time and temperature setting give the best results, stick with it.

or smother your pancakes in butter and maple syrup. nobody will care what color they are.
