  1. You can wrap bacon around filet mignon and grill them ....  My husband likes fresh green beans.  I make some bacon in a pan; remove it and saute the beans in the drippings.  Serve with the crumbled bacon & cut up fresh tomatoes on top......


  2. Try wrapping some around scallops, shrimp or a de-seeded jalapeno and then grill or pan fry.  Or around pieces of gingered chicken.

  3. I find that onion and bacon goes so well together. One recipe that is simple and satisfying:

    Chunky Chicken Soup

    Boil 4-6 chicken with bouillon

    add big diced onion (prefer red)

    roll 6-8 bacon, put toothpick through to hold (pan fry them   with a little broth from the soup), then add to soup

    Wrap Chicken Breast in bacon strip (or stripes depending on how big)

    place in pan, & pour vidalia onion dressing over it-just to cover.

    Cook @ 375 until chicken is done....

    serve with rice or salad.

    Or, you could get some chicken breast and wrap bacon around it then cook it and serve it with new potatoes or something.

Bacon wrapped scallops.  Easy just buy fresh scallops wrap the bacon around them poke a toothpick in them, and marinade them with any Lawrys marinades of your liking.  Sear them in a pan for just a few minutes, then bake them in the oven until they are golden and the bacon looks cooked.  Use the big pieces of bacon, not the turkey bacon.

  9. Gnocchi With Bacon:

    2-lb bag of frozen gnocchi (or 2 lbs. fresh gnocchi)

    1 lb cottage cheese

    1 lb bacon

    Cook gnocchi as directed on package. While gnocchi is cooking, fry the pound of bacon. Drain the bacon on paper towels and pat to remove excess grease. Cut or break (depending on how crispy you like your bacon) the bacon into 1' pieces. Drain the gnocchi and put back into boiling pot. Add cottage cheese and mix well. Add bacon pieces last to maintain crispness. Salt and pepper to taste.

  10. Quick but elegant.  Serve with a salad and some really nice bread.

    PASTA CARBONARA

    1/4 lb. bacon

    1 stick (1/4 lb.) butter

    1 c. milk

    2 tbsp. wine vinegar

    1 lb. pasta (fettuccine or linguine)

    2 eggs, whipped

    1/2 c. fresh Parmesan

    Cut the bacon into little pieces and cook in butter until clear. Heat milk in a small saucepan, and add the bacon and butter, add the vinegar; this will turn the milk to cheese. Simmer for about 15 minutes, or until the sauce cooks smooth.

    Boil the pasta al dente. Drain and return to pan. Immediately throw in the eggs, the bacon sauce and cheese. Toss and serve. Add salt and pepper to taste.

  14. Blue Cheese, Bacon and Chive Stuffed Pork Chops  

    INGREDIENTS:

    2 boneless pork loin chops,

    butterflied

    4 ounces crumbled blue

    cheese

    2 slices bacon - cooked and

    crumbled 2 tablespoons chopped fresh

    chives

    garlic salt to taste

    ground black pepper to taste

    chopped fresh parsley for

    garnish

    DIRECTIONS:

    1. Preheat the oven to 325 degrees F (165 degrees C). Grease a shallow baking dish.

    2. In a small bowl, mix together the blue cheese, bacon and chives. Divide into halves, and pack each half into a loose ball. Place each one into a pocket of a butterflied pork chop, close, and secure with toothpicks. Season each chop with garlic salt and pepper. Keep in mind that the blue cheese will be salty. Place in the prepared baking dish.

    3. Bake for 20 minutes in the preheated oven, or it may take longer if your chops are thicker. Cook until the stuffing is hot, and chops are to your desired degree of doneness. Garnish with fresh parsley and serve.
