Great question!

Here are some suggestions:

1) Get very drunk at a bar in the Bowery.  Not "tipsy"...  drunk.... so drunk you swear you will never drink again...so drunk you miss your plane back to NC.  I did this on my 21st birthday in NYC and I still tell the stories.  I think it took me about eight hours to catch another flight.  I spent most of the day the color of avocado pulp.

2)  Get a tattoo.  My cousin from Gaffney, SC got a giant screaming eagle tattooed on her back.  The eagle is wearing a chainmail shield with the number "21" on it.  It is absolutely fearsome!  My friend Carla got a tiny butterfly just below her waistline.  That is a good one, too.

3)  Go the Empire State Building and have a piece of real New York cheesecake...less flamboyant but if you get the cheesecake from the right place you may not forget the experience ever.

4)  One of those bus tours might be fun, too.  They are everywhere.

As an aside, there is definitely one thing I recommend you NOT do:  set a drifter on fire while he is passed out.  Trust me, it is a lousy idea.  My friend Mark did this on his 21st birthday in NYC and is now in prison for manslaughter.  It was one of the most uncool things I have ever witnessed.  I don't know your personal beliefs but to me all life is precious.  The dude did not deserve to die even if he was down on his luck.  On the upside, Mark has finished his freshman year of college through correspondent courses offered at the facility.

Drink and get laid with a really super hot guy. (wear protection). That's what I did 20 years ago on mine!

  By the way, the Hard Rock Cafe is no big deal anywhere. It's just a glorified, over advertised, restaurant. There isn't anywhere to dance and the music is just loud when you're eating. It's not that great. The food is just ok, too.  Google some local clubs in NYC and wear a money belt!

If you go to NYC definitely have some dinner at the Hard Rock Cafe, I love eating there [people say its overrated but if youre going there to get a bite to eat I think its great. Ive gone there since I was a kid] but you have to show up a few hours in advance and put your name in then walk around the city for awhile and come back.

In the city you can see a broadway showing or take a carriage ride around Central Park or even go to a concert thats being held in one of the theatres. You can easily look up online whos playing.

I dont know if they have a place in NC but theyre very popular for special occasions and have AMAZING Japanese food.

Take some close friends and spend a day deep-water fishing or rent a little speed boat for an afternoon, go parasailing or go have a bonfire and play some drinking games. You could even find somewhere nice to go camping for the weekend with a bunch of your pals.

Go to Atlantic city or  on a cruise personaly I would choose Vegas then I would go to a club and dance, drink and gamble. Have FUN!
