  1. If you have a natural foods store around, and have a coffee grinder, purchase some chicory root.  Chicory root has been used with coffee for generations in the Southern United States.  Basically, you'll want to use half coffee grounds and half chicory when you brew it.  I've had coffee with chicory before, and I prefer it to straight-up coffee... and it has less caffeine but you still get your coffee "buzz!"

  2. Cinnamon will help, but it sounds like maybe your putting too much coffee in.  Two tablespoons of coffee is good for every 2 cups of water.

  3. If you were brewing coffee in some kind of machine I'd suggest cleaning the machine with a mix of vinegar and water and then flushing through with water a few times. In areas with hard water, mineral build up in coffee machines can be the cause and the vinegar is good at neutralizing them.

As far as instant coffees go, adding cinnamon or cardamom can help, but often the relative strength to the quality of the coffee used is a factor. The cheaper the coffee and the stronger it's made tend to create bitterness.

  4. I add cinnamon to the coffee grinds, and brew as usual. Could just be the strength you are brewing, maybe add a little more water.

  5. Date seeds are also ground and used in the manner of coffee beans, or as an additive to coffee.

  6. I have seen people add egg shells, also have seen someone add a pinch of salt.  My mother in law added sugar.

  7. I like cardamom seeds crushed up in the coffee when brewing. It adds a really nice scented and slightly sweet taste to the coffee.

    Lovely!
