  2. The Shitaka mushroom or Shiitake as it is commonly called is a specialty mushroom with a distinctive flavor that commonly grows on oak logs. American production of shiitake production has increased faster than any other mushroom.  Shiitake mushrooms have been grown in the US for over twenty years.  Wholesale prices range from $6 to $12 per pound.

       As to your question about are they worth it to grow, they can be very profitable.  How profitable probably depends on the supply of fresh oak logs in your area.  I live in a rural area and have been able to get all the logs needed cleaning up after storms and large oak limbs after timber has been cut from areas near by.  

       Shiitake can also be produced on fresh oak wood chips.  If you have a source of chips from a tree trimming company, that may be the most profitable route for you to take.

    You can find spawn and even instructions on line at www.fieldforest.net or they will send you a free catalog. I'm sure there are more places that you could find spawn, but they are the one I use, I'm not trying to drum up business for them.

  3. You will need light and temperature controlled facility and choose varieties that are culturally accepted and climatically appropriate. A difficult proposition, but if you have a market that will pay the price and the import competition is low, then you will have a great "niche" crop market. If the import competition is too high, then you may have to choose another crop.
