Here's a recipe for traditional napoleons:

The only way I can see to make it non-dairy is to replace the whipped cream with a non-dairy topping like Cool Whip and to make the custard with whatever you use as a cream substitute, like liquid Coffee Mate.  It won't be exactly the same, but it's worth a try!
