As an undergraduate...... depends.  what areas of archaeology are you interested in?  

University of Florida - Caribbean

Texas A&M - Marine Archaeology

this just an example.  it probably doesn't matter where you do your undergrad as long as you get the foundation.  it will matter more when you get into grad school, and you can then pick a school that has your research interest.
