  1. Honduran Quesadillas --

    "Traditional Honduran cake made of cheese, eaten during Christmas. Honduras, Central America"

    INGREDIENTS

    1 1/2 cups margarine

    3 cups white sugar

    2 cups sifted all-purpose flour

    1 cup rice flour

    1 tablespoon baking powder

    2 cups warm milk

    6 eggs

    2 cups Parmesan cheese

      

    1/2 cup white sugar

    1/4 cup all-purpose flour

    1/4 cup sesame seeds

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a medium glass baking dish.

    In a bowl, beat together margarine and 3 cups sugar until fluffy. Alternately beat in 2 cups all-purpose flour, rice flour, baking powder, and milk. Slowly beat in the eggs and Parmesan cheese. Transfer to the prepared baking dish.

    In a small bowl, mix the 1/2 cup sugar, 1/4 cup all-purpose flour, and sesame seeds. Sprinkle evenly over the batter in the cake pan.

    Bake 45 minutes in the preheated oven, until a toothpick inserted in the center comes out clean. Cool completely, and cut into squares.

    Honduran Liver --



    Ingredients

    1 small onion, minced

    1/2 green pepper, chopped

    1 tablespoon cider vinegar

    1/2 teaspoon hot pepper sauce

    1 lb liver, cut in small pieces

    2 tablespoons butter or margarine

    1 tablespoon fine dry breadcrumb

    3/4 cup chopped salted cashews

    1/2 cup water

    hot cooked rice

    Directions

    1) Mix first 5 ingredients and set aside 15 minutes.

    2) Melt butter in skillet and add liver mixture, crumbs, nuts and water.

    3) Cover and simmer 20 minutes, or until liver is tender.

    4) Serve with rice.

    Honduran Mango Avocado Salsa --

    My grandma came back from Honduras with some amazing snack recipes up her sleeve and I just needed this one in particular. It is great for parties and adds a very festive feel to your surroundings. It is best served alongside some tortilla chips, and I prefer yellow corn tortilla chips and if you have to use a name brand I prefer Tostitos.

    Ingredients

    1 mango, peeled and diced

    2 avocados, peeled and chopped

    1 tomato, diced into very small pieces

    1/8 red onion, diced

    1 red pepper, diced into very small pieces

    Optional

    1 dash garlic powder (optional)

    1 dash lime juice (optional)

    Directions

    1) Cut up the mango avocados, tomato, red onion and red pepper in to the amounts described and then add, for extra flavor, a dash of garlic powder and/or a dash of lime juice.

    2) Then when all the work is done let it sit in the bowl for about 20 minutes or over night with a plastic wrap over it to keep its flavor. After that all you have to do is serve it with chips and enjoy!
