Question:

I want to make chili (con carne) . . . help?

I have a pound o'burger, some kidney beans, and a package of chili seasoning but it seems like something is missing . . . . what else do I need?

I like to add to your ingredients that you have up there, a can of tomato sauce, more chili seasoning, green peppers, onions, a can of tomato juice, more chili seasoning, and a jalapeno' pepper cut up really small so I get some spice in every bite...Then towards the end I chunk up a tomato or two to add a little more texture.

    And then a nice peanut butter sandwich to go with it....ooohhh yeah

    Every once in a while I cook and add macaroni noodles for a goulash type of chili...mmmmm


  2. This is my grandma's recipe. Enjoy.

    Chili

    1-1/2 to 2 lbs. Ground Beef (salt and pepper to taste)

    2-3 ribs of celery ( cut in about 1/8 inch slices)

    2-(14-1/2 ounce) cans diced tomatoes

    3 cups water

    1-1/2 cup tomato juice

    3-(15 ounce cans) Dark red kidney beans, rinsed and drained.

    2-3 Tbsp chili powder

    1. Brown ground beef in skillet. Salt and pepper to taste.

    2. Add onion and celery. Cook together for a few minutes. (3-5) Add dices tomatoes, and tomato juice.

    3.Transfer all to large pot, and add water. Cook slowly for 1 hour. Add chili powder.

    4.Add Kidney beans and cook for 15-20 minutes more.

    serve hot with crackers or cheese.

    Make sure you use some canned tomatoes. I prefer both diced and stewed.  I also use several different cans of beans at the same time.  Black beans, kidneys and pintos.

    Don't forget to make cornbread.

    salt and pepper and a can diced tomatoes

    1 teaspoon Worcestershire sauce (optional but add an extra bit of flavor)

    one recipe here for you:

    Chili con Carne

    1 lb. chuck steak, minced or best minced beef

    2 medium onion

    1 clove garlic

    olive oil

    2 tsp chili powder

    1 tsp ground cumin, heaping or 1 tsp crushed cumin, seeds, heaping

    7 oz sun-dried tomato, in, olive oil

    1 fresh red chili, seeded, and, finely, chopped

    2 x 14 oz cans chopped tomato

    2 x 14 oz tins red kidney beans, drained

    1/2 stick cinnamon

    sea salt

    freshly ground black pepper

      

    Directions:

    Chili con Carne

    If you are going to use the oven method then preheat the oven to 300 degrees F (150 degrees C).

    Chop up the onions and garlic in the food processor and fry in some olive oil until softened. Add the chilli powder and cumin and a little seasoning.

    Chop up the meat in the processor and add to the pan, cooking it until slightly browned.

    Place the sun dried tomatoes and chillies in the processor with the oil and blend to form a paste. Add these to the beef with the tomatoes, cinnamon stick and a wineglass of water. Season a little more if need be.

    Bring to the boil, cover with greaseproof paper and the lid, then either turn the heat down to simmer and cook for 1 1/2 hours or transfer the pan to the oven for about 1 1/2 hours.

    Add the red kidney beans 30 minutes before the end of cooking time.
