will the police be able to stop me or bring me back home if my parents calls them

The police cannot do anything to stop you in Scotland. You are an adult at the age of 16 in this country, unlike England where you need parents consent up until the age of 18. Even if you move to England now (coming from Scotland), you are under Scottish law and the "English" police CANNOT make you return home either if you don't want to! Make you're own decisions if you're really unhappy.. 16 is very young though.
