  1. Top quality authentic food with a great atmosphere.  No one wants to go to a restaurant like this to get Americanized versions of the food so serve the real thing and stick to real recipes from that area.  The atmosphere should also be authentic with furniture, decorations, etc. from the area, not the knock-offs you find here. People also love to experience different customs so do some research and find out what happens during traditional meals from the area and incorporate those into the experience.

Yes, I would definitely eat there.

  2. don't do it.

If you have not already owned a restaurant, don't do it.

65 % of new restaurants fail.

Too much work, too much theft, too much  spoilage.

    I would eat there, once.

lack of expertise is the biggest failure cause

  3. Reasonably priced, low fat, balanced meals that taste good.

  4. I think the full dining experience would be awesome.

Like the middle east places you sit on the floor, etc etc.

I say find the cultures and customs and go for it.  Avoid crazy foods and maybe make part of it family friendly...

    Good luck!  Sounds yummy!
