I want to try black-eyed peas but I'm not sure how to find them at the store?

Are they sold fresh, canned, dried? When a recipe calls for them, is it usually talking about fresh ones? Thanks!

The best ones are in the freezer case.  Buy the ones with green snaps in them.  Cook gently in a pan with some water.  The water will become the juice, so be careful and watch them cook, not letting them burn or get too dry. A gentle boil is about right.   . Put a couple of stripes of bacon in the pot and cook covered. Season to taste with salt.  Most of us southern cooks add a tablespoon or so of sugar to make them so good.  I also like the dried ones, but the canned ones are not very good.

You come both dried and in tins. When a recipe calls for them they usually call for cooked ones.

When cooking dried beans they should be soaked for a couple of hours before hand then cover wiith water and bring to boil and simmer for abut 40 mins.

Dried ones are more messing about but are much cheaper tan tinned onces.

Black eye beans are great in chilli instead of kidney beans, they make great curries and and I pad casseroles out with them.

You can buy them canned or dried.  The recipe will specify which ones to use.  I would just use the canned-  just open the can and rinse well.

they are sold dried, canned and frozen. the fastest easiest way buy a can of Glory seasoned southern black eyed peas, fry some bacon or salt pork in the pot just as the fat/grease comes out- open the can pour it in stir heat and season to your taste. frozen is kinda the same but follow package directions dried takes several hours and makes a lot like regular beans-same concept. You can find them canned, dried, fresh or frozen. I would probably go with fresh or frozen.

Try frozen. Cook as directed but add a little veg oil and salt when you start cooking. Cook until the liquid starts thickening a little.
