  1. the jars may explode get a small grate the size of your pressure cooker and a set of tongs to put the jars in and also to take the jars out

  2. Use an old wash cloth or 2.

  3. Hopefully you mean a pressure CANNER, because the much smaller pressure cooker is intended to cook your dinner and they are not recommended by the USDA for home canning.

A real pressure canner comes with a wire canning rack. You may also buy these separately from the canner manufacturer, and in stores that stock canning supplies.

The purpose of a canning rack is to lift the jars off the bottom and the sides of the canner where the direct heat contact with the hot metal could cause the jars to shatter. The wire framework also holds and separates each jar so they can rattle about and break. This also allows the superheated, live steam within the pressure canner to circulate freely all around the jars so the contents are thoroughly and evenly heated to ensure that the bad little nasties are killed off before they get a chance to kill you.
