I don't know if any of these have full staff, but there are some castles, there.  Mostly they look like they are run like hotels.

I don't know about Italy, but if you want a perfect castle with everything (the staff, medieval food and treatment, all the half naked service girls and a firework) then Czech Republic will accommodate your wish.

The cost is US $ 50.000.- for up to 50 guests per day/night.

If you are just alone than US $ 6.000.- will do for one night.
