  2. I made stuffed shells yesterday:

    jumbo shells cooked al'dente' then drained

    mix: 1 c. small curd cottage cheese or ricotta

             1 egg

              1 c. good quality grated parmesian cheese (not that stuff in a can shaker, block type you grate yourself)

               1 1/2 c. motzerella cheese grated

    mix all together

    stuff each shell

    place in baking dish

    cover with Italian sauce (Jar type you like)

    bake @ 350' for 45 min covered

  3. ITALIAN "SHEPPARDS PIE" (this is my version)

    Brown lean ground meat (beef & pork)

    Add 1/2cup of onions (chopped)

    2 garlic cloves chopped

    Simmer until done.  

    Add 2 tablespoons of tomato paste, cook for a few minutes.

    Add Large can of crushed tomatos.

    season with salt and pepper.

    Let simmer for about 20 minutes.

    Layer bottom of oven proof dish with meat sauce.

    Add 1 can of corn niblets and 1 can of cream of corn.

    Top with mashed potatoes. (mix in 1 cup of mozzarella to mashed potatoes)

    Bake in oven for about 45 minutes at 350 deg.

  4. Pasta a la matriciana

    Yield: 4 to 6 servings

    3 quarts water

    3 tablespoons Bertolli Extra Virgin(tm) or Bertolli Classico(tm) olive oil

    4 garlic cloves, thickly sliced

    1/2 cup chopped onions

    6 ounces sliced bacon, cut into 1-inch pieces

    1/2 teaspoon red pepper flakes

    1/2 cup red wine

    1 cup tomato sauce

    1 cup chicken stock

    4 tablespoons chopped basil

    1 pound pasta: penne, ziti, or rigatoni

    5 tablespoons grated Romano cheese

    Bring pasta to boil in large pot. Heat the Bertolli(tm) olive oil and the garlic in a large saute pan over medium-high heat until the garlic starts to brown, about 2 or 3 minutes.

    Add the bacon, onions, and red pepper flakes; cook until bacon begins to brown and onions soften. Pour in the red wine and stir up any brown bits that might be clinging to the bottom of the pan. Boil until the wine is reduced by half.

    Add the tomato sauce, chicken stock, and chopped basil. Bring to a boil and simmer 15 to 20 minutes. Cook pasta in boiling water according to package directions. Drain well, then return to the pot. Pour sauce over pasta and cook, stirring, 3 minutes over medium heat, until the sauce is absorbed. Add the cheese. Toss well and serve.

  5. I boil pasta, pour some sauce and cheese on top and voila I'm done :)

    Or how bought some brushetta?   Put some olive oil, basil, tomatoes, and perhaps cheese

    Pop it in the oven and magnificent!

    Cook spaghetti noodles

    mix in a jar of spaghetti sauce

    put in  pam sprayed cake pan

    top with boneless, skinless chicken b*****s dipped in shake n bake Parmesan mix.

    add cheese on top of all

    Bake 350 for 45 min uncover half way through

    Enjoy... simple and Delicious
