The Eiffel tower and boat cruises on the Seine work every day of the year, including holidays. In touristic districts you will still find some stores and restaurants open, especially since spring is the busiest touristic season in Paris. And of course Notre Dame Cathedral and other churches will be open but there will be a lot of masses that day.
