Look on 101cookbooks if you can. There are amazing recipes there. Find something you know your boyfriend likes and make that. IF you are pleasing him, I'm sure his parents will be happy

You can make Tapas and Paella then have flan for desert.

You don't have to make Spanish food because a) they are used to it, and b) it's probably better in Spain.  Ask your boyfriend what he thinks his parents would like to eat and start looking up recipes, or just cook them something that you are used to making and know you can make well.  If you want them to feel at home, you can always take them to a Spanish/Tapas restaurant.
