I work 60 hours a week do you got any ideas for fast, inexpensive vegan meals to take with me to work.

I eat all my meals away from home so i need to think of some meals that can be easily baged and dont need to be heated.

  1. Wraps,

    sandwiches,

    leftover roast vegetables made into a salad with balsamic vinegar and some greens

    salads

    nori rolls (sushi) with vegetables, mushrooms, tofu as fillings

    Vietnamese rice paper rolls (fill with glass noodles, tofu strips,vegies and fresh herbs such as mint leaves and coriander leaves with a sweet chilli or soy dipping sauce)

    Cup mushrooms filled with guacamole and sprinkled with tamari-roasted sunflower seeds (may need to assemble at work)

    leftover nut roast or lentil patties with a salad

    quinoa salad with green onion, red pepper, grated carrot (any vegetable really) and dressing of your choice

    Cold marinated tofu kebabs with satay sauce

    I'm sure there are lots more but that's all I can think of right now!

    Vegetable sticks with dips, such as hoummus, baba ghanoush (eggplant dip), beetroot and tahini dip.

  3. Do you have access to a refrigerator?  If not, you can buy one of those lunchboxes with buillt-in ice blocks, or buy some of those little pseudo-ice bags and stick them in the freezer every night to put in with your food.

    Inside could go things like soy yogurt, cut veggies (broccoli, carrots, etc., buy pre-cut if you like), wraps (hummus and veggies on a sundried tomato tortilla or whatever flavor of tortilla you like), or noodle salads.  Trader Joe's, Whole Foods, or other natural foods stores have lots of great premade lunches like that that you can either buy or just look at for inspiration and then make your own version.

    If you don't want to bother with keeping the food cool, your options will go down.  A friend used to eat a lot of nut butters on wasa crispbread.  She'd make a little sandwich out of it and take it along.  You can update PB&J by putting almond butter and your favorite jelly on toasted bread (keeps it from getting mushy).  Dried fruits, fresh fruits, and nuts are other options.
