Well for whole made pasta, I use the very old polly-o book recipe at Grandmas, really for ravioly but for any pasta pretty much, I use it. For five people, three cups of pasta and two eggs;  for two to three people mix about a cup of flour (I usually use whole wheat). Put flour on table (directly); leave hole in center of flour (hope that makes sense) and put eggs in middle. Beat eggs. This is all done directly in the table. Then work the pasta into the eggs and need until it is smooth. Sit for about fifteen minutes. Then role till very thin. For spices in the sauce, I use the basic family recipe (very basic) onion, crushed tomatoe, or fresh puread, and basal, salt pepper. I don't put spice in cheese cloth, but sometimes if I make ravioli I put the rigotta in chees cloth.
