Question:

I would like to know of ways to use zucchini.?

back at the beginning of summer i planted what i thought was squash but as it turned out it was actually zucchini. I am looking for ways to cook it and use it, i have never ate it before and don't really know what to do with is as there are lots of it...if anyone could help me that would be great!

  1. My 2 favorites are zucchini bread (great when you're sick to death of zucchini and still have 5 bushels left!) and zucchini hash.  Bread recipe is common. Here's the hash:

    1 – 1 ½ fresh zucchini, grated

    Herbs and spices including:

    ½ tsp. cumin

    ¼ tsp. Mediterranean spice mix, optional

    ¼ tsp. dried mint

    1/8 tsp. nutmeg

    ¼ tsp. dried parsley, optional

    ¼ tsp. savory, optional

    2 Tbsp. olive oil

    ½ onion, peeled & finely chopped

    1 clove garlic, minced

    2-3 oz. silken or soft tofu, crumbled

    1 egg, beaten, optional

    ½ c garbanzo beans (chick peas), cooked & drained

    ½ c black beans, cooked & drained

    ½ tomato or 1-2 small roma tomatoes, finely chopped

    Salt & pepper to taste

    Directions:

    In medium bowl toss zucchini with herbs & spices.

    Heat oil in large deep frying pan or skillet on medium high.  Add onions, stir until translucent. Add garlic. Stir 1-2 minutes.

    Add zucchini mixture, stir until softened.

    Add tofu, stir until heated through, breaking up tofu until crumbly and incorporated.

    Pour egg over mixture, stir 1-2 minutes, cover and cook 1-2 more minutes. Remove cover and stir.

    Add garbanzo beans and black beans, stir occasionally until heated through and mixture is relatively dry.

    Add tomatoes and toss, cover and cook 2-3 minutes.

    Salt and pepper to taste and serve.

    Here are a few tips and recipes for you. Zuccchini is very versatile. It can be used in basic meal preparation and also in baked goods. You can use your zucchini fresh or you can freeze it. To freeze, you can dice it into the size you want, put into a freezer container or bag and freeze. I also grate or shred mine to use in zucchini bread. I freeze it in the amounts that I need for my recipes. I like to use zucchini in my homemade spaghetti sauce too!

  3. Stir fry,

    Roasting it by cutting in half then brushing with oil.

    They taste good in a savoury muffin.

    as a side dish in a meal

  4. the possibilities are endless:

    this is what I made tonight-

    cut up pork- put in pan with a little oil, garlic powder, season salt, and pepper, brown for 5 min, add chopped onions, tomatoes, chilies, zuchinni, (corn is good too) cook for another 5 min.  Cover w/water (add some chicken base if you want), and let simmer until veggies are tender.  Serve with tortillas.  If you have some tomatillo salsa, throw that in the pot to- it gives good flavour.

    The other thing I love to do with zuchinni is saute it with a little bacon or ham and onions- be generous with the garlic powder and pepper.

    Yesterday I made zuchinni bread with a can of pineapple added to it- (I used splenda instead of sugar too)  my kids can't stay out of it!!!

    Zucchini muffins, bread, cake, cookies, spaghetti with zucchini tomatoes and pepperoni, stuffed zucchini, zucchini and chopped chicken in cream of chicken soup, baked with stuffing on top, Zucchini soup.

  7. Start giving some away NOW. You will have to try hard as few people want it.

    I love it. The other posts have some good ideas.

    I like to let them mature into Hubbard Squash which are about 5 inch in diameter. Hollow them out in halves then stuff them with an Italian sausage, tomato and cheese recipe. Make up your own with some Italian seasonings.

I can see how you made that mistake,zucchini ,is a summer squash,like patty pan (can't find a list now)They are all prepared in the same manner and the whole thing is eaten including the skin.  Winter squash have the hard outer shell like a pumpkin and only the flesh is eaten.   zucchini and all the summer squash must be picked small,before it swells up,as soon as the blossom is finished      I personally, like it cut up and steamed,mashed with butter salt and pepper, the second way is battered and deep fried.cut in 1/2 inch round

    battered and deep fried in " Butter Flavored Crisco) and eat as you go, If their are children they will eat it that way faster than you can fry.Set up in the patio with paper plates.

  9. Zucchini IS squash.  You cook it and use it in dishes the same way you would use yellow squash.

  10. zucchini pickle- either u sock it in salt solution or sock it in vinegar.

    make a salad with lime, chili, bit of an onion, sugar and salt.

  11. Try cutting it in half, removing the seeds, filling that void with browned hamburger, topping with cheese and baking.

    You can julienne it or grate it on a cheese grater and use it in place of pasta in a dish like alfredo.

    Additionally, the blossoms of the zucchini plant can be stuffed and eaten as well.  i would suggest stuffing them with cheese, breading or battering them and deep-frying them.
