I would love to know how to make a good cheese sauce.?

Hello, this is my first time asking a question here.....but I do enjoy answering them as best as I can and everyone here seems very nice so here we go:

I'm looking for 2 sauces to make. I'm pretty sure both stem from a bachemel sauce (sorry for spelling, white sauce) but I would like to make an Alfredo sauce and also a Mac and Cheese sauce.

I'm not a health nut, so don't worry about looking for insanely healthy or vegan stuffs but I just would like some recipes from the masses.

    if you want everyone to enjoy a meal this meal is IT.

    mac&cheese

    you need: 1-2lbs of American cheese

                       milk

                       macaroni

                       1/2 stick of butter

    so simple!!

    _start with getting at least one and a half pounds of american cheese or 2 lbs depending on how many people your feeding.

    THEN...

    _grab a medium size saucepan start with 1/2 a stick of butter, 1 cup of milk and 1 pound of cheese(for every pound of cheese you should add 1 cup of milk). Heat up the milk and butter for about a minute/minute and a half then begin adding slices of the american cheese and stir occationally. Once all the cheese is mixed inwith the milk and is creamy and thick, add to the fully cooked macaroni and mix up! make sure the cheese is thick or it wont be very good. Ham is very good with this mac and cheese. you have to try it ! good luck.


  2. A good nacho cheese will do wonders for making mac N cheese! I've never tried it but i hear it's really good.

  3. The mac and cheese sauce I make is pretty simple. I use a can of Campbell's cheese soup, about 2/3 cup milk, and 8oz. sour cream. I also add in some powdered hidden valley ranch dip mix. using only half of the packet. mix it up, and then I add my cooked noodles, and little smokies sausages. pour into a pan, and top with Italian bread crumbs then bake on 350 for 30min.

  5. Make a rue from 2-3 T browned butter and enough flour to make a thin paste,  add some cracked pepper and mustard powder (dijon is ok).

    slowly add milk (pref. whole, but you can use 1%), Stirr continuously until it thickens slightly. At this point, you pick if you want alfredo or mac and cheese sauce. Use parm cheese for alfredo, or sharp cheddar for mac and cheese sauce.

    If you feel your sauce is not thickening properly, go ahead and use corn starch to thicken it, before adding the cheese. Also, I tend not to add salt, at least until after you add the cheese, because the cheese adds a lot of salt to it.

    For a variation, add a spoonful of pesto to either sauce...mmm

  6. The simplest way to make a sauce, cheese, alfredo, bechemel, etc. is to just buy a box of corn starch. The recipes for sauces and gravies are on the box. Mostly you will need the corn starch, milk, cheese of choice and any herbs you choose to add. You can experiment and come up with all kinds of nice sauces using the corn starch. Be sure to add the corn starch to a cold liquid though in order to dissolve it. There are many many recipes out there but that is the simplest that I know of. Hey it has worked for my family for years.. So thumbs down to all of you.

    I'm a good cook and I did this the complicated way of making a roux (butter and flour) and adding milk etc for a long time.  

    The easiest way to make cheese sauce is:

    Heat up cream - half and half or 10 percent works.

    Add in as much cheese as you want - slice it so it melts faster.  

    Voila - cheese sauce.  You use about as much cream as how much sauce you need.  

    If you overheat it will break down.  

    Alfredo - heat your cream then add parmesan cheese (as much as you want) and you could add a bit of garlic,  A restaurant trick is to put a cheese slice (like you use to make grill cheese sandwich) at the end to smooth it out and pick up the flavour a bit.  

    Mac and Cheese - you can saute a bit of chopped onion, bit of dry mustard, dash of worchestershire sauce and then add cream to heat up.  Add cheese starting with cheddar but you can mostly use whatever you want and some sour cream too. But if all you want to use is just cream and cheddar cheese that works perfectly.  For the baked mac and cheese - cut up a bit of fresh tomato and mix with pasta in when you put it in the casserole.

    If you want to try this - just heat a bit of cream, add some cheddar and melt it and pour it over your cooked brocolli.

    Savanah - think about this - what is the difference between milk and cream?  The amount of butterfat.  So if you want to make your dish even simpler sometime try just the cream and the cheese especially for alfredo.  I noticed yours and mine are basically the same.  Sometime if I don't have cream I will try it your way.
