I know there is Spinach paneer, however

aren't there a few others as well?

Like the spinach + collards combo? {that 1's pretty good too}

and do I HAVE to go somewhere special for all these exotic spices?

In the search, put "palak" first for recipe results and then put "spinach" for more recipe results.  Spinach is called palak in Hindi.
