Iam canning tomatoes got some left need a good salsa HOMEMADE receipe to make apx.12 pints HELP ?

  1. We put 2 cans of tomatoes

    2 cloves of garlic

    2 roasted jalapenos we grill them and them put them in salsa

    i am mixed on cilantro because i don't add much it over takes the salsa if you are not careful keep adding it to taste

    salt

    pepper

    1 red onion

    sprinkle of tabasco

    cumin

    chili powder

    Lime juice just a little to take away acidy taste

    I chop all it all up in food processor

    melt velveeta cheese or white land of lakes american (they sell it in back of walmart in deli section.

    fry up 1 container of jimmy deans hot sausage and mix

    1 can of rotel

    paprika on top before serving.


  2. You might want to try one of the sweeter recipes and add a little pineapple or apple to the traditional mix.

    In Latin American countries the recipes aren't very scientific. You just add what you have.

    I don't know if you plan to water bath or freeze the end result. Both can be a little watery when you open the jars. Try adding a little tomato paste, or dry the tomatoes and peppers first to absorb some of the water. Some people just cook the whole mix down before canning, but I think much of the chunkiness is lost that way.

  3. here's what I put in my salsa: Garlic, onion, red bell pepper, green chilis, cilantro, cumin, salt, pepper & a little vinegar.
