Ideas and Recipes for Vegetarian Lunches for a Picky Eater?

I am looking for relatively healthy vegetarian and/or vegan meal and snack ideas for my significant other. For work he drives around all day and doesn't have much time to eat, so he has to eat on the go. He isn't able to heat food items or keep them cool and needs some ideas for simple, vegetarian and/or vegan foods he can eat for lunch while driving or stopped somewhere.

He doesn't like onions, bell peppers, cooked tomatoes or anything that might be considered 'mushy' when cooked. Mashed beans are ok, but mushy foods like cooked tomatoes or onions or peppers is the main texture problem he has.

Also, since he's a guy and doesn't want to put too much time/effort into preparation, simple snack/meal ideas are best.

  1. Insulated coolers can keep things cool.

    Pasta Salad

    Egg Salad (if he eats eggs)

    Sesame noodles

    PB&J

    Cheese sandwich on whole wheat

    veggie delight style sandwich (like subway's)

    Since he's a guy he does not want to put much effort into it?  I don't think gender has anything to do with it.  I know many "guys" that put more effort into cooking then I do!


  2. Well, to open up the options available to you, why wouldn't he be willing to bring a lunch box with an ice pack in it....that way, he could keep some food cool....

    Anywhow, here are some ideas for you:

    ~ Hummus, roasted red pepper dip or guacamole with wholegrain tortilla chips

    ~ A spinach wrap with refried beans, vegan sour cream, lettuce, tomato, red onion in it....

    ~ Salad with all kinds of veggies, sunflower seeds, raisins, and a little container with balsamic vinaigrette in it

    ~ Cooked quinoa with chopped green onion, a bit of oil, cut mushrooms, crunchy shredded carrot....

    ~ He could make a nice fruit salad with banana, orange, apple, berries, and lemon juice to keep it all fresh, and prevent the fruit from oxydizing.

    ~ A wholegrain or flax bagel, with low-fat cream cheese on it, topped with sliced tomato and cucumber. It's really good!

    ~ Cold pasta salad (cooked spelt, amaranth, wholegrain or brown rice flour PASTA... with a nice vinaigrette dressing (oil & vinegar), some fresh cut veggies, tossed together)

  4. Annie's Fruit Salsa and Cinnamon Chips --

    INGREDIENTS

    2 kiwis, peeled and diced

    2 Golden Delicious apples - peeled, cored and diced

    8 ounces raspberries

    1 pound strawberries

    2 tablespoons white sugar

    1 tablespoon brown sugar

    3 tablespoons fruit preserves, any flavor

      

    10 (10 inch) flour tortillas

    butter flavored cooking spray

    2 cups cinnamon sugar

    DIRECTIONS

    In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.

    Preheat oven to 350 degrees F (175 degrees C).

    Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.

    Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

    Quick Breakfast in a Pita -- good for lunch too

    INGREDIENTS

    1 pita bread, cut in half

    2 eggs

    salt and pepper to taste

    1/2 cup cooked and diced potatoes

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Place pita bread in oven to warm.

    Heat a medium skillet over high heat. Coat with cooking spray. Add potatoes and saute until lightly browned, about 5 minutes. Reduce heat to medium and add eggs. Mix gently until eggs are firm, about 45 seconds. Season with salt and pepper. Remove pita from oven. Stuff pita with potato and egg mixture. Eat immediately.
