Ideas for a simple vegetarian picnic?

Some variety would be good but I don't want to re-stock my fridge and pantry full of new ingrediants for one picnic!

  3. We have vegetarians in our family and we usually have fruit salads, pasta salads, veggie such as baby carrots and celery and the dips. They eat rolls and bread is filling.  You can also do veggie burgers. I don't know how to make them but they sell them in packs of 8 or 12 in the grocery store.   Not sure if its a veggie picnic and if you are a person that doesn't eat red meat or pork but you'll eat fish, there are also some stores that sell kabobs made with smoked salmon and chicken.

  4. We had a little picnic out on our boat this weekend, so I'll tell you what I made.

    Wraps -- Tortillas, garlic hummus, avocado, spinach, tomato and white mushrooms.

    Pasta salad -- Mine was artichoke hearts and macaroni, with vegan ranch, olive oil, etc.  It didn't turn out too good, but there are plenty of yummy pasta salad recipes.

    Canteloupe and honeydew chunks.

    And our friends brought iced tea and potato chips.

  5. Beans and sweet onion salad!

    1 package Wacky Mac

    3/4 cup Cider Vinegar

    1 can (14.5oz) Green Beans drained

    1/2 cup Salad Oil

    1 can (14.5oz) Wax Beans drained

    2/3 cup Sugar

    1 can (14.5oz) Kidney beans drained

    1 1/2 cup Cherry tomatoes halved

    1 cup Sweet Onion chopped

    Salt & Pepper to taste

    Instructions:

    Prepare Wacky Mac according to package directions, rinse with cool water. Meanwhile, combine drained beans and chopped onion in large bowl. In separate small bowl, combine cider vinegar and salad oil; slowly add in sugar to dissolve. Add drained Wacky Mac and vinegar mixture to beans. Add tomatoes and salt and pepper (optional), gently toss to combine. Makes 6 servings

The key to a wonderful vegan picnic is fresh, fresh, fresh!!!  Fresh fruit, fresh vegetables, fresh rolls...You could have cut vegetables on nice crusty bread with a dollop of nayonaise.  You could also make a delicious pasta salad with your favorite kind of pasta, Italian dressing, fresh raw cut vegetables, and cubed soy cheese...or you could make a bean salad.

    The choices are endless.  If you plan on grilling you could take smart dogs or garden burgers.  

    Chips and salsa is a good idea too.

  7. You could go on a root digging expedition.  Dandelions are edible too.  I don't think the flower part is.  But if you peel the stem it's supposed to be scrumptious.

  9. If your not vegan, a simple layered bean dip would be nice.

    Get some multi grain chips.

    Layer:

    Beans, sour cream, guacamole, tomatoes, green onions, cheese, salsa, olives and anything else you want to add to it. Then eat with your chips. Its easy to make and easy for on the go.

  10. Go for a fresh sticks of young carrots, turnips and stems of celery.  This is so refreshing when served together with ice.  enjoy

Get on the internet or go to a newsagency and buy some recipe magazines.  There are some really yummy salads you can make, take a cake like pavlova or  cheesecake (only if they eat eggs and drink milk of course), a fruit platter and salad sandwiches.  And for meals that you like but require meat just minus the meat, they still taste good to me!  Good luck, I hope you have a lovely time!

  16. If you're in the park, it's loaded with grass and plants for free.  AND they have drinking fountains

  17. I've found that watermelon is colorful, refreshing and tasty especially when chopped up and marinated in cranberry juice, pineapple juice, grapefruit juice and rum.

    baked ravioli- 1 pkt of fresh ravioli, 500 g of organic pasta sauce(leave aside 200 g), 3 cups of Parmesan cheese- grated (leave aside i cup for topping)

    2 springs parsley- chopped

    preheat oven to 190*c. Cook ravioli in boiling water until it is just cooked- drain. Line a casserole dish with a thin layer of pasta sauce, add a layer of ravioli and sprinkle a layer of cheese and a touch of parsley. Repeat layering process finishing with a layer of the last cup of cheese. Bake for 15 Min's or until cheese is melted and bubbly. cut into squares like a lasagna

    mushroom risotto.

    300g mushrooms- chopped

    2 cups of arbrio rice

    1 Lt chicken/ vegetable stock

    1 cup Parmesan cheese- shaved

    Lightly fry mushrooms in a non stick pan. add rice, stir until  combined. Put stock in another pan and boil. stir 2/3 cup stock into the rice. Stir until absorbed. Continue adding stock in small quantities, stirring regularly, until gone. When this process is done, add cheese and season
