Hi everyone. Its Sunday and its blah out and I am just lazy today! I am thinking about making sausage for dinner but need some help. I was thinking maybe sausage on rolls or sausage peppers on rice. Just something different with sausage but not to time consuming to make. I just feel like I make the same things over and over.

Any ideas??

  1. Make some jambalaya. Go to the store and get two boxes of Zatarain's Jambalaya Rice Mix. Add 2lbs. of cooked sausage. You'll have a meal that will last 2 or 3 days. You'll love it, especially if you like spicy foods.

  2. cut sausage up into bit size pieces... put it on a shish kabob stick.. add peppers, onions, mushrooms cherry tomatoes... anything you want and then grill it up.

grill up corn on the cob too its really good

  3. you could use sausages to make scotch eggs!

    DIRECTIONS

Place chicken and sausage in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until chicken is opaque and falls from the bone, 45 minutes. (I usually do this the night before and refrigerate to skim the fat.) Remove chicken and sausage, reserving broth. Shred chicken.

In a large pot over medium heat, cook bell pepper, onion and garlic until onion is translucent, adding reserved chicken broth if necessary. Stir in tomatoes, chili powder, pepper sauce, cayenne, Worcestershire and bay leaves; reduce heat and simmer 15 minutes.

Stir the shredded chicken, sausage and tomato paste into the spiced vegetables. Continue to simmer until flavor is as spicy as you like, adding reserved liquid as needed to thin.

Stir in 1 cup reserved liquid with the rice. Simmer 20 minutes, until rice is tender. Serve or continue to simmer, as desired.

    See McGentry's instructions, below

    Preparation:

    From McGentry:

One of my family's favorite quick meals is polish sausage with sauteed onions and peppers on a hoagie roll. I saute the onions and peppers first, using Pam spray and a little water. When the onions and peppers are tender enough, I remove them, leave the heat under the pan the same (med-high) add a little more spray and water, slice sausages to bun-length, then cook until ready. Return the onions and peppers to skillet until piping hot, Serve.

During this process I have to add water quite often.

  9. Here are some things that I have used w/ sausage.

    Acorn Squash w/ Sausage

Cut a acorn squash in half-spoon out seeds add butter a piece of sausage, and a little brown sugar or maple syrup and bake in a shallow baking dish w/ a small amount of water.

    Spaghetti w/ Sausage

Instead of putting ground meat slice sausage and fry in the skillet w/ peppers and onions add spaghetti or marinara sauce. Pour on top of spaghetti noodles.

Potato salad w/ hot smoked sausage

3 lbs. red skin potatoes, cleaned, and quartered

    1/4 cup + 1 tbsp. vegetable oil

1 lb. Hillshire Farm® Hot Smoked Sausage, cut lengthwise in half then across in 1/4" medallions

    3 tbsp. white wine vinegar

    1 tbsp. hot pepper sauce

    1 tsp. salt

    1/2 tsp. pepper

    1 tbsp. whole-grain Dijon mustard

    1 green pepper, diced

    3 celery ribs, diced

    6 green onions, sliced

    Directions:

Bring a large pot of salted water to a boil, add potatoes; cook until fork tender, stirring occasionally, for about 10 minutes. Drain well.

In a skillet over medium-high heat, lightly brown smoked sausage in 1 tablespoon of vegetable oil for about 5 minutes. Drain; set aside.

Whisk vinegar, hot pepper sauce, salt, pepper, mustard, and 1/4 cup of the vegetable oil in a large bowl. Gently toss mixture with potatoes, green peppers, celery, green onions, and sausage. Serve immediately or refrigerate until serving.
