Ideas for vegetarian lunches?

I need some very easy vegetarian lunches that can be taken to school. Because it will sit in a locker for hours before being eaten the meal cannot contain things such as mayonnaise or eggs. Also heating the meal is not an option. Thanks Much!

  1. I like non-lettucey salads or cold rolls.  They're pretty easy.  

    - Salads based around chickpeas, wheatberries, lentils, couscous, or quinoa - I mix in sundried tomato or Italian dressing, or a little tzatziki - I often throw in olives, sundried tomatoes, cooked onions or mushrooms, dried fruits and nuts, cucumbers, peppers, etcetera

    - Buy rice papers from the grocery (Asian aisle) and rehydrate as instructed; fill with mangoes, lettuce, pineapple, carrots, jicama, or pickled Asian turnip; you can bring along soy sauce, teriyaki, or peanut sauce to dip if you'd like

    A speedy food to make is just to buy a packet of frozen dumplings or samosas (I buy mushroom or leek gyoza or potato samosas), bake or pan-fry them, and eat them cold for lunch.  

    You can also try cold soups, like cold pureed cucumber and yogurt soup, or gazpacho.  Depends on your adventurousness, really!  


  2. Check out Veganyumyum.com, her tomato basil sandwiches are amazing. I'm pretty sure they would still be good after a few hours (especially if you put them in a lunch box with an icepack).

    Another good sandwich: Thick layer of hummus, alfalfa sprouts, slices of avocado, and slices of tomatoes. This is extra good if you can toast the bread in a frying pan (like you would with a grilled cheese) but it is good either way :)

  4. Gobi Aloo can be made ahead of time and put in a sealable container and is great hot or cold, imo.

    Also, hummus with pita and tabouli make a nice lunch.  I used to order it every day when I worked in Encino.

  5. I bought these little containers at the store to make fresh sandwiches for myself. I put jelly in one and peanut butter in the other. and then the bread of course in my lunch pack another thing to do it freeze your sandwich at night and then by lunch time it's chilled and delicious for sure! I couldn't believe how fresh it tasted. I also would make my own cup of noodles. using hot water from the bathroom. you could also make a nice pita sandwhich and freeze it! Hummus is my favorite. If you just wanted some pita and hummus. I'm a big freeze kinda person. So I freeze everything from carrots to apples to my pita sandwiches.  

  6. Get one of those insulated lunch boxes and a cold pack that you keep in the freezer made for lunch boxes.  Problem solved.

  7. Sandwiches like PB and J/etc or tofurkey or lightlife deli slices with tomato and hummus, cold pasta, quinoa or couscous and beans, cold soup/gazpacho,  roll-ups/wraps in tortilla with fixins, vegan tuna or potato salad, vegetables with rice.

    Sides to go with lunch: dried fruits, nuts, vegetables, fruits, applesauce, hard and soft pretzels, homemade chips (potato, kale, tortilla, corn, banana, pita, etc), seeds (sunflower, pumpkin), vegan cookies, homemade bars (like the recipes I gave you in another answer), vegan muffins, vegan brownies, crackers, breads, fries, plantin, trail mix, luna bar.
