Ideas for what to cook!?

My fella is a chef and i want to suprise him and cook tonight!

We got a big slab of pork (not sure wat cut) and i was going to use some of that, its just solid meat so i was wondering how could i cook it so that its a little bit different and special!!

Any suggestions welcome!

  2. I urge you to identify the cut, as there are huge differences in the way they cook. Check to see if the label to identify it or ask your boyfriend.

    ROAST PORK TENDERLOIN

    2 lb. pork tenderloin

    1 tbsp. butter

    1 tbsp. oil

    Sprig/2 of thyme

    2 peeled garlic cloves

    1/4 c. chopped shallots

    Salt & pepper to taste

    1/3 c. red wine

    1. Wash pork under cold running water; dry with paper towels.

    2. Melt 1 tablespoon butter and 1 tablespoon oil in skillet over low heat.

    3. Turn to medium high and let butter foam a little.

    4. Toss in tenderloin, sprig or 2 of thyme, 2 peeled cloves of garlic.

    5. Brown tenderloin all around about 5 minutes.

    6. Add some chopped shallot, salt and pepper.

    7. Swish around 30 seconds.

    8. Turn heat to high and add 1/3 cup red wine; scrape residue.

    9. Put heat on lowest possible setting, cover.

    10. Roast 45 minutes. Turn meat half-way through.

    11. Remove tenderloin to cutting board.

    12. Skim fat from remaining sauce. Add 2 tablespoons flour and boil to thicken.

    13. Slice meat and pour sauce over.


  3. Make Sweet & Sour Pork w/ Fried Rice!  Mmm!  I love to make that when I get a big ol' pork loin, and don't want to raost it all... makes a nice change.

    Sweet and Sour Pork

    1 pound pork rib chops

    2 Tbsp. ground ginger (or fresh)

    ¼ cup soy sauce

    1/2 cup all purpose flour

    ½ cup corn starch, divided

    2 tablespoons soy sauce

    1/2 cup rice vinegar

    1/2 cup sugar

    1 red and 1 green bellpepper, sliced

    1 small onion, cut into large chunks

    1 can pineapple chunks, drained & reserve juice.

    4 cups oil

    Cut meat into the size of small mushrooms. Marinate the meat with ginger, soy sauce, salt, for 15 to 20 minutes. Mix the flour and ¼ cup corn starch together then toss with the pork. Let every piece of pork is coated by the flour. Put the wok on high heat, pour oil in and heat until it's half warm. Put the pork in one by one; fry until a crust forms. Switch to medium heat, cover the wok and fry until the crust is golden brown. Take the meat out and drain the oil. Leave about two tablespoons of oil in the wok. Put the vinegar and sugar in the wok; stir slowly until the sugar melt. Add sliced bellpeppers, onion, and pineapple chunks; stir. Mix ¼ cup cornstarch w/ pineapple juice, add to wok and stir well. Switch to high heat, put the meat in and stir quickly so that all the pork chops are covered by the sweet and sour sauce.

    Fried Rice with Ham

    Serves 4.

    3 large eggs, lightly beaten w/ 2 tsp. waer

    2 Tbsp vegetable oil, divided

    ½ tsp. toasted sesame oil

    Coarse salt to taste

    4 green onions, thinly sliced diagonally (both white and green parts)

    4 garlic cloves, minced

    5 oz. ham, thinly sliced and chopped (can use cooked chicken, pork, or shrimp as well)

    4 cups COLD cooked rice

    3 Tbsp. rice vinegar

    1 cup frozen peas, thawed

    In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat.  Beat eggs, with 2 tsp. water and ½ tsp. coarse salt.  Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes.  Transfer to plate; when cool enough to handle, cut into strips.

    In same skillet, heat remaining Tbsp. vegetable oil and sesame oil.  Add garlic and scallions, heat and stir until fragrant, about 1 minute.  Add ham and rice, season with salt, and cook until very hot, stirring often, about 5 minutes.  Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.
