  1. Goes great with any kind of tomato recipe. Use different things like pasta, rice, hamburger, scallops, pork. they don't take long to cook usually put them in last.


  2. I cut lines with the tines of a fork down the length of a green squash, then cut into 1/2" sections.  Cook together with the yellow zucchini in salted water till just tender.  Cooking too long makes them mushy.

  3. Southern squash casserole

    2 1/2 lbs. squash (yellow, zucchini, etc.)

    3 tbsp. butter

    3 tbsp. flour

    2 c. canned (or fresh cooked) tomatoes

    1 green pepper, chopped

    1 sm. onion, minced

    1 tsp. salt

    1/2 c. buttered bread crumbs

    Wash squash, slice into saucepan, add 1/4 cup water and steam until tender. Drain off excess liquid and put into 2 quart baking dish. Melt butter, stir in flour and add tomatoes, onion, green pepper and salt. Cook for 5 minutes. Pour sauce over squash. Cover with buttered crumbs and bake, uncovered for 30 minutes at 350 degrees. Serves 6.

  4. Slice thinly and sautee in a bit of oil with sliced mushrooms, or slice, drizzle with oil and grill on the BBQ.

  6. I made Ratatouille recently using squash instead of eggplant and it was delicious! Good summer veggie dish.

  7. Baked Zucchini Gratin:

    1 medium onion, sliced

    2-3 lbs. zucchini or yellow squash, sliced

    1 stick butter/margarine, melted

    2 cups mozzarella cheese

    1/2 cup bread crumbs

    1/4 cup Parmesan cheese

    Salt, pepper, and thyme to taste

    Preheat oven to 350 degrees. In a greased casserole dish, layer onion and zucchini and season with salt, pepper and thyme. Pour a little of the melted butter over this layer. Sprinkle with some of the mozzarella and Parmesan cheese. Mix together bread crumbs and remaining butter and layer over the cheese mixture. Sprinkle with remaining cheese and bake for 35-40 minutes until zucchini is fork tender.

  8. Spray it with varnish and arrange prettily in a large bowl in the center of the table.  Add some green flowers.

  9. I love to cut it into 1/2" pieces and toss it with spaghetti and other pasta dishes. It's good added to a casserole too.
