If 2 people sign a lease they are both responsible correct?

If one person decides to back out the landlord could go after that person correct or do they just hold the other person responsible for everything?

    When 2 or more people sign a lease for the same apartment, they are all equally responsible for the total amount of the lease. If one person defaults on the lease, everyone is responsible and could be liable for the payments.

This is not a simple answer.  The landlord does not care who the money comes from as long as it gets paid.  So if one person backs out the other person is responsible for paying the rent to the landlord.  If you can prove that you both split the rent every month and your paid part and your roommate paid the other part of the rent you would have to take them to court to get the money from them.

    Basically your agreement with your roommate was outside the agreement with the landlord.  Between the two of you the landlord is expecting to get the rent.  It could all come from one of you each month.  Outside of the rental agreement, you and your roommate made an agreement on how you would split the rent between the two of you.

    The best way to prove you had this agreement was is if you both paid the landlord separately.  Meaning each of you wrote a separate check to the landlord.  Another way is if your roommate wrote you a check and then you wrote one to your landlord.

    To get the money from your roommate who backs out, you will most likely have to take them to court.  But, you should have a good case and be able to win it.  I think you should let your roommate know that you will have to take them court if it comes to that.

    You'd be best off looking for another roommate.  Just ask your roommate to stick around until you find another person to take their place - it only seems fair.
