    x = [(1/4)(240)] / 36

    36 / 12 = 3 dozen cookies

    now we have a ratio:

    "known" / 3 dozen = "unknown" / 20 dozen, where known = 1/4

    (1/4) / 3 = x / 20

    multiply both sides by 20

    20(1/4) / 3 = x

    since 20(1/4) = 5, that means that x = 5/3

    you'll need 5/3 = 1 2/3 tsp for 20 dozen

    another way to think about it:

    you'll need (20/3) as much for 20 dozen as you did for 3 dozen

    (20/3) ( 1/4) = 5/3 = 1 2/3
