If I am being chased by a raged bull, is it wise to jump to water? (river, lake etc)?

It could be helpful, I suppose, if you can get to the water quickly enough, it's too deep for the bull to wade through, you're a good swimmer, then perhaps you can escape underwater. Bulls can ford, but I don't imagine they can dive.

Chances are pretty good that you will not encounter a situation where this information is useful.

No, bulls can swim, even when they aren't enraged. My advice would be to get into a NARROW alley or up in a tree. DON'T try to go into play-dead, it didn't work on others and it won't work for you! You shouldn't need to know this anyway.
