If I overcook roasted potatoes, what will they taste like?

I've roasted my potatoes for well over an hour on 375 F and they are still a little hard-tasting! I want the insides soft obviously but the outside crispy! I put them back in the oven. Are they overcooked? (I thought over-cooked potatoes are soft)

  1. Bite into one and see what it's like. Don't boil them first, and I agree scrape them up and turn at least once.

    Overcooked potatoes will get hard and will taste like your chewing plywood.


  2. If you really want soft roast potatoes, you should have boiled them before roasting.

  4. yes, you overcooked them.  All the water that WAS inside has evaporated out from being in the oven so long.  Keep going, and you'll have potato chips eventually.

I find the roasted potatoes come out fluffier on the inside and crispier on the outside if I roast them at 425 or 450.  You didn't say how large your potato wedges or slices are so I can't really say if they're overcooked.  If all the moisture has left the inside of the potatoes, they'll be hard.  I'd say try them as they are now and use a higher heat next time.  I've never had the wedges take more than 1/2 hour at higher temp., sometimes as little as 20 minutes.  Toss with a little olive oil and seasoning and spread out on baking pan, turn once or twice.

  6. Overcooked potatoes are soft.  Keep cooking 'til the outside browns.  If the outside gets too brown, put in microwave until they soften, the back in the oven under the broiler with a little x-tra oil at 400 and watch carefully for like 3 minutes.  They'll probably crisp up.

    try roasting them until they are tender . then whip a egg white  toss the potatoes in it add a little salt and return them to the oven.for about 20 more minutes or so.
