If I put 2 forty one cent stamps on a letter that says it requires extra postage will i be able to send it?

You should be able to.  41 cents is the standard letter size postage rate for a one ounce letter.  An additional oz., making the letter two oz., is 3 cents, for a total of 44 cents.  I had always put multiple 41 cent stamps on bigger letters until I talked to the post office a little while ago.
