  1. When you book your tickets your itinerary will always have your arrival time and date listed.  The arrival time will be "local" time.

When you are searching for flights the sample itinerary for you to choose or reject will have the arrival time and date on it for planning purposes.   The time and date on your itinerary will be "local" time for that country.

If you leave Munich, for example, at 11:25 PM on KLM, you will arrive in Bangkok at 5:50 a.m.  on the same day.    I would rather arrive in Bangkok at 5:50 a.m. and have the whole day ahead of me than arrive late at night.

Run a couple sample internet checks and you will see the arrival times.  Make sure you don't have a long layover somewhere that adds 12 hours to your time.

    Good luck.

  2. The flight would land in Thailand at 23:00 Germany time (11 hours after it left). Germany's time zone is either UTC +1 (standard time in the winter) or UTC + 2 (daylight savings time in the summer).  Since Thailand's time zone is UTC +7 (all year), the time in Thailand would be offset by either six or five hours from that in Germany or 05:00 (if in winter) or 04:00 (if in summer) the next morning.
