Probably nothing you would recognize.

EVERYTHING would be changed because of massive radiation damage ( remember it'll be also in all food) and it may be cockroaches or dolphins.

Cockroaches or rats as they're the only things that would survive a nuclear blast.

Probably the cockroach---it's already survived longer then any living creature on earth .....and will probably be the ONLY thing to survive a nuclear attack.

Most species are less able to adapt than humans, do they'd be wiped out as well.

If it's an existing species, your best bet might be something from the deep ocean.. where the impact of a nuclear holocaust might be less extreme.
