If a restaurant had rabbit as their dinner special would you order it?

I am the owner of Larson Rabbitry in southern Wisconsin. I will be state certified soon and am trying to see if people would be willing to try rabbit in a restaurant even if they never have before. Examples of for the special could be, Brazed rabbit with a strawberry mint sauce, or the deboned loin or leg with a mustard sauce. I have many very tasty recipies. Honest opinions are appreciated.   1. You almost have to be from the old country.  It is popular in Italy...made cacciatore style.  It hasn't found a niche yet.

  3. I would eat rabbit on a menu, I've never had it at a restruaunt, but my father in law loves rabbit especially at this northern Italian restruaunt he goes to. I've recently been learning to cook and so would be interested in learn how to make rabbit.

    I would recommend a good bread item too, rabbit is a little greasy.

  7. I absolutely love rabbit - if it was on the menu (and I trusted the chef who was making it....ie...I wouldn't go to McDonalds and get the McRabbit stew) I'd order it in a heartbeat.

    Try braising the legs in beer and mustard with a touch of cream, or marinating it overnight in red wine and mirepoix.....delicious
