I am the owner of Larson Rabbitry in southern Wisconsin. I will be state certified soon and am trying to see if people would be willing to try rabbit in a restaurant even if they never have before. Examples of for the special could be, Brazed rabbit with a strawberry mint sauce, or the deboned loin or leg with a mustard sauce. I have many very tasty recipies. Honest opinions are appreciated.
