  1. Been in the biz 24yrs. in my experience it took no later than    1 - 1 1/2hr. to get out of my work. So if the person in ?? gets done @ 9pm they should be walking out the door of their job @ 10pm. 11pm at the Very Latest. it all depends on the size of the restaurant. what position they hold in the restaurant. like for instance, the kitchen staff: (cooks, chef, dishwasher, etc.) they should be gone no later than 10pm. The Wait Staff is another story: unless they are new to the business it shouldn't take them anymore than 1 1/2hrs. to complete their side work and to be walking out the door. the Only exceptions to that rule are: (Which management Has to inform  the employee long ahead of time of the dates & approx. time they will be delayed) When Exterminator Co. scheduled(that's usually only once  month) or a Private party(Weddings, Banquet, etc) or if the restaurant is short-handed (someone calls in sick, etc.) those to me are the only legible excuses to the rules I can think of :other than: an accident or death.  anything later  later than that (not counting the driving time home) i would have to say grow some eyes in the back of your head because there's something "phishey" going on @ that restaurant.

  2. I, too, have worked in restaurants for years.  The first thing I learned is that the closing time of the restaurant has nothing to do with the time you leave.

For instance, you may close at 9, but in most cases, if a table walks in at 8:55, you still have to serve them, since you are not techically closed. Ironically, that will be the table that orders appetizers, soups, salad, a bottle of wine, and well done steaks, which take at least 20 minutes to come out.

On top of that nonsense, you will have closing side work. This will include resetting all the tables (making sure they are clean, set, salt and peppers are full and sugar caddies are in order, etc.). You'll also have to clean the coffee / tea urns and make sure the resaurant is ready to go for the next shift.

You could be out of there as quick as 9:45 and as late as 11:00. It all depends on the closing side duties.

  3. as soon as the close up work is done.

    depends on resturant.

  4. Depends on a few things....

    How busy they have been.

How many people are working on that shift

    How quick the employees work.

Probably at the latest 10.15 earliest 9.30

  5. Probably between 9:30 and 9:45....

  6. depends! kitchen staff, dishwashers, hosts or servers all have a different time they get to leave depending upon how fast they break down and get their section down. In some restaurants they make everyone help one another until its done. Usually its 1-1:45 hours after closing time.

  7. Somewhere between 9 and 10 PM, unless the manager has a rigorous cleaning routine after hours.

  8. I've been in the industry a long time.  If it is busy at 9, then the customers will stay later, and the staff stays longer too.  It could be as late as 11:00.

  9. i think this would depend on their job.. cleaning staff dish washer etc would probably get out about an hour late whereas waiters etc could probably leave once the restaurant has closed.
