Its one boat in one event, so its only one gold.

On the overall table it appears as one gold, but each individual gets their own gold medal to take home, including the cox (ninth member of the crew). This is the same for all sports, however many players.

Yes it counts only as one medal in the overall table, even though one gold medal is awarded to each rower.  This is true in all multi-player events.

You win a medal per race not per person - so yes, a crew of 8 would have a physical medal each, but it would only count as one gold.
