  1. roast beef or lamb - a shiraz, merlot, cab sav

    summery bolognaisey pastary sort of dish - chilled pinot, or a cheap italian red chilled

    spanish tapas type sausages, seafood etc - mix up a sangria

    basically red meat red wine, white meat white wine.

    seafood or spicy asian anything - a good quality verdellho or semillon

    chicken - any decent white

    But you've got me thinking of a rare roast beef, sliced thin, with a lot of its own juices.

    Oh, pardon ME. U have the meat, U want a wine?

    A merlot, of course. Sterling vineyards makes a great one, and Ravenswood from Australia is good & not too expensive.

  4. Steak. Red meats go better with red wine. Chicken, pork, fish are better with white wine. =]

  6. Depends on the meat and the sauce/gravy. Heartier meats and spicier sauces need spicier wines to hold up to them.

    Cabernet and Merlot are usually paired with the spiciest foods
