  1. Potatoes are not actually roots, but underground stems. When they are exposed to sunlight they start photosynthesizing and turn green. Like the stems and leaves of potatoes and other plants in their family (tomatoes and eggplants) green potatoes contain a toxic compound called solanine.

    However the toxin is confined to the green bits and does not spread to the white, so if you peel them off the green you will have not problem. Even if you eat a little of the green it won't do you any harm.

  3. They are safe to eat, but cut the green part away before you cook the potato because it's bitter.  They turn green when they are exposed to sun light either in the field or in the store.
