If the speed of light was infinite but the postulates of special relativity still held, then

time dilation would be obvious at low speeds.

length contraction would not occur.

objects could have negative kinetic energy.

any moving object would have infinite momentum.

    "any moving object would have infinite momentum."

    This sounds like the most reasonable answer since the work required to move an object increases as it approaches the speed of light so if the speed of light was infinity no work would be required to move an object. Energy would be meaningless as everything would have infinite energy... or momentum.
