Question:

If you're making dried beans....?

I want to make beans and rice with turkey kielbasa and onions later this week or early next week. I'm going to soak the dried beans overnight (I think I have pinto) and instead of cooking them on the stove, I wanted to cook them in the slow cooker all day. Should I add much time since a slow cooker is just that, slow and if so, how much extra time would be good?

  1. If you are soaking them overnight, start the beans in the cooker in the morning before work.  Eight hours should be enough.  Make sure to add all your herbs and spices in the morning too.


  2. Slow-cookers have only 2 settings: Low & High (OK some have Warm).

    On Low it takes 6-8 hours, on High it takes 3-4, no matter what.

    I would cook the rice separately, in the evening, to keep it white.

    Besides, rice absorbs a lot of water.


  3. i would boil the beans on the stove, it would only take an hour to boil them after you soaked them, throw out the slow cooker!



  4. Slow Cooker Pinto Beans

    1 pound Dry pinto beans

    1 teaspoon Chili powder

    1/2 teaspoon Dried oregano

    1/2 pound Ham hocks

    4 cups Water

    1 Onion, chopped

    House Seasoning, recipe follows

    Wash the beans and soak overnight in cold water. Drain the beans and dump into slow cooker. Stir in chili powder and oregano.

    If using ham hock: Pre-soak ham in a separate pot, for at least 2, or refrigerated up to 24 hours, depending on how salty you want your stock to be. Add ham hock to slow cooker with beans and pour in ham soaking liquid. Add more water until ham hock is completely covered.

    Add onion to slow cooker with beans and meat. Stir well. Season, to taste, with House Seasoning, cover the pot, and cook on high until beans are very tender, about 5 hours.

    House Seasoning:

    1 cup salt

    1/4 cup black pepper

    1/4 cup garlic powder

    Mix ingredients together and store in an airtight container for up to 6 months.


  5. If you pour off that water they soak in overnight and replace w/ fresh for cooking, the beans won't make you f**t. :-)

    I cook my presoaked pintos in the crockpot about 4-5 hours... start out on high for about 3, then reduce heat to low for last 1-2 hours.  Take lid off to let water evaporate for thicker beans.  Since you want them to slow cook all day, just start (and stay)  on low.
