By "do anything you want" I will assume assume you mean "any theoretically possible thing nobody's been able to do yet."  In that case...

Walk into Osama Bin Laden's HQ with a tactical nuke in my backpack.

I mean, if I'm gonna die anyway... I just wanna see the look on his face when I show off the trigger in my fist.

That, or hot-tubbing and (Rated NC-17 activities deleted) with the 3 women from the "Charlie's Angels" movies.

Either would do.

If I have the options of going out on my own terms....(meaning not stuck in a hospital bed)

I'd want to go Skydiving with My Fiance and Paula Abdul. Then spend the rest of the day with family and friends saying my goodbye's and die peacefully (as possible) at home with them all around. No hospitals, no tubes....just at home....with the people I love around me.

Id be frightened and would probably ruminate on what happens once I die.

I would probably want to see Italy, Japan, and other places. And I would want to do it with all my friends and family members.  

And then leave with a grand, memorable exit.

Take the day off.  Clean up all my mess.  Look up the person I love, tell her how much I love her, and die peacefully in her arms with a smile.
