  1. Ten dollars is not going to get you too far, so something cheap that'll go far is chips and salsa, or taco spread.

    Recipe:

Ground beef mixed with taco seasoning

    Diced tomatos

    Ritz crackers

Place the meat and tomatos on the ritz crackers, and top with shredded cheese if desired.

Absolutely wonderful!! Very filling and will go far, not to mention it's cheap.

  2. Mash up some artichokes (you can get them in a jar for about $2, be sure to drain them!), add a little cream cheese, and some parmesan cheese. Cut up a bagget to finger food size and spread mixture on bread. Sprinkle some cheddar cheese on top, toast at 200 until they look toasted. ALWAYS a big hit. Good luck!

  3. baked chips

  4. Serve this with tortilla chips .  Your choice of jalapeños or green chili will determine how spicy this will be.  Serve it warm.

2 c. (8 oz.) Monterey Jack OR cheddar cheese, shredded

    8 oz. cream cheese, softened

1 (10 oz.) pkg. frozen chopped spinach, thawed & squeezed dry

    2 tomatoes, finely chopped

    3/4 c. chopped onions

    1/3 c. half & half

1 tbsp. finely chopped jalapeño peppers or 1 small can green chili's

Sautee onions in small skillet until soft, add tomato and peppers.  Sautee for 2 minnutes.  Add cream cheese and half and half, stirring until cheese is melted, add spinach and remaining cheese, stirring just until mixed lightly.

Pour into a buttered dish. Bake at 400 degrees for 20-25 minutes or until hot and bubbly.

  5. A 7 layer dip for tortilla chips.  I always make that and it always is gobbled up.  I layer guacamole, sour cream, diced tomatoes, diced onion, drained salsa, diced yellow peppers and top with more sour cream and chopped scallions.  Put in a clear bowl so the layers can be seen.  It's really cool looking.  Bring a bag of tortilla chips and you are all set.

You can layer however you want but you should avoid putting 2 of the same color together and try to spread out the "wet" ingredients in the layers.

  6. Mediterranean Cucumber Cups

    Ingredients

1 small red onion, finely chopped

1 red bell pepper, finely chopped

1 vine ripe tomatoes, seeded and, finely chopped

1/4 cup black olives, pitted and chopped

    1/2 tablespoon dried oregano

    1/4 cup fresh feta, crumbled

    1/2 cup parsley, chopped

    Salt and ground black pepper

Juice of 1 lemon plus 1/2 tablespoon zest

2 tablespoons EVOO – Extra Virgin Olive Oil

    2 English cucumbers, seedless

    Preparation

In a large mixing bowl, mix together the onion, pepper, tomatoes, olives, oregano, feta, parsley, lemon juice and zest, and EVOO. Season with salt and pepper, and reserve.

Peel the cucumbers partially, so it has 4 stripes of skin going down the entire length of the cucumber. Trim the ends of the cucumbers and cut each cucumber into slices 3/4 of an inch thick -- you should have about 20 pieces. Scoop out the center of each slice with a melon baler, leaving a shell of flesh.

Scoop about 1 to 2 tablespoons of the Mediterranean salad into the cucumber cups and enjoy your refreshing bite-size snack!

  7. Dill weed dip

    1 pint sour cream

2 to 3 Tablespoons dill weed

Couple of shakes of garlic salt

Mix all together, serve with raw veggies - carrot sticks, celery sticks, cauliflower florets, broccoli florets, etc.

  8. Pizza Bagels =)

  9. Deviled eggs

  10. Caprese salad.

    Simple and yummy.

Slice garden tomatoes (or from a farmer's market), slice up fresh mozzerella, and wash basil leaves.

Make a little stack with one tomato slice, one mozzerella slice, and a basil leaf.  Drizzle with olive oil, salt and pepper.

  11. Spinach Dip in Sourdough Bowl .... Make the spinach dip on the side of the Knorr vegetable soup mix, but put it into a hollowed-out sourdough round.  Replace top on bread; wrap in foil and refrigerate overnight.  Serve with sliced baguettes ... (day-old bread, on sale, is fine)

  12. Chili Cream Cheese Dip:

    1 8 oz package cream cheese:   $1.50

    1 can chunky chili:  $1.09

1 cup shredded cheddar cheese:  $3.50

    1 bag corn chips:  $3.49

Layer softened cream cheese in pie plate.  Top with chili and shredded cheese.  Microwave for 2 minutes, or until cheese has melted and the mixture is heated thru.  Serve with corn chips.
