  1. illustrator deals with vector images which can be resized to ANY size you want. photshop on the other hand deals with raster images such as photographs but saying that, photoshop can also create vectors but it is very limited wheares illustrator is soley dedicated to vector graphics so it is much more powerful and in my opinion less fiddly than photoshop. however a lot of graphic designers like to use the two programs in combination.

  2. Illustrator is a vector drawing program. It is often used to create layouts for printed pieces, since it has a very good type engine and is able to create high resolution pieces for many purposes. Illustrator can do just about everything a graphic designer needs to get done, except manipulate photographs.

Photoshop is a bitmap modification program. It has a rudimentary type engine. When photoshop files are used for printed pieces, most of the time, the type comes out low resolution. It can be used in ways similar to Illustrator, but frequently comes up short if used as the sole means to create graphic design pieces.

On the other hand, Photoshop is a powerful image manipulation program, which can be used to color correct, modify and create composite images from photographs.
