Question:

Im a vegetarian and i need lunch suggestions ?

okay im in highschool and i dont like the c**p they serve in the lunch line and i was just wondering if anyone had any ideas for a light lunch. mainly sandwiches.. remember im a vegetarian though and i just want to hear some ideas because my coach says im not getting enough energy in me before practice.. (ive been eating only pb sandwhiches) im up for anything! haha

  1. I like hummus sandwiches with avocado and tomato.

    Thats one of my favorites. =)

Make grilled veggies for dinner, and save some.  Then the next day make a loaded grilled cheese sammie with soy bacon and the grilled veggies (red peppers, squash, whatever you like) in the sammie.  Likewise, a honey wheat english muffin with cheese and mock turkey and soy bacon or whatever you like gives you a lot of energy (slow release carbs) and is low fat.  PB is fine but it has a lot of fat.  And in the AMs I think a toasted honey wheat english muffin with some honey on it and maybe a bit of PB will stick with you a while.  And obviously a grilled veggie wrap is good, and you can always put some jack cheese in it, hot or cold.  And those little BabyBel cheeses are good protein.  

    These are good, easy and might get coach off your butt.  Good luck!

  3. I'm vegetarian too and I tend to go to pb and j sandwichs also untill I expiremented. I got a sub bun and put lettuce, cheese, pickles and black olives on it....I love it. All u can do is expirement....put things on it that u like


  4. Umm Boca burgers, fake Chicken Patties, soup in a thermos.

  5. There are a lot of things you can make. you can have a salad.

    Or you can try the following suggestions:

        -a lettuce, cheese, tomato and mayo sandwich

       - a tofu sandwhich

       - a caesar wrap.

       -vegtable soup

       -a cheese and lettuce sandwich

       -cheese pizza

    I hope that was helpful. And remember for the soup if school/work does not have a microwave put it in a thermos.    

  6. Try a Chickpea Burger.  Take a handle full of chick peas some spices whatever you like some tahini to hold it all together and whiz it in the food processor and warm in the over or ever serve cold on a bun.

The PB sandwiches are fine; but you don't want to eat them every day.  If you allow for cheese in your diet then try some cheese and tomato sandwiches.  Also there's raw vegetables you can eat - carrot, celery, broccoli, zucchini, cucumber, and all kinds of sprouts.  How about some fresh fruit?  An apple will give you a good lift, but not like a coffee jag that just wires you and then you crash about an hour later.  Apple energy lasts for quite awhile.  What about making some pasta salad at home and bringing it to school for lunch.  You can put all kinds of veggies in the pasta.  Use a little olive oil to keep it from drying out, rather than mayonnaise.  Remember, dude, man does not live by peanut butter alone.  Be creative.  Experiment.

  8. Try a zucchini burger. cut a large zucchini into thick slices add seasoning if desired and grill them (if you can't grill then try broiling),put one on a bun and and viola! (add mustard ketchup relish etc. to taste)

  9. Try a cream cheese lettuce and pickle sandwitch.  Its deliciouse.  Also try a lettuce and tomato with Tofurkey.

Sandwiches like PB and J/etc or tofurkey or lightlife deli slices with tomato and hummus, pita sandwhiches with hummus and tabouli, chicapeas and tomato, basic salad, basic cold/raw soup or stew/gazpacho, pasta salad, quinoa or couscous and beans or lentils with chickapeas, cold soup/gazpacho, roll-ups/wraps/pockets in tortilla with fixins, vegan tuna or vegan egg or potato salad, vegetables with rice, gobi aloo, vegan somen salad or other pasta salad, dumplings, samosas, filled grape leaves, filled vegetables such as zuchnni, small vegan bagel or pita pizzas with cream cheese and veggies. To keep cold lunches cold pack an ice pack, and for hot lunches a thermos or/and heat pack.

    Sides to go with lunch: dried fruits, nuts, vegetables, fruits, applesauce, hard and soft pretzels, homemade chips (potato, kale, tortilla, corn, banana, pita, etc), seeds (sunflower, pumpkin), vegan cookies, homemade bars (like the recipes I gave you in another answer), vegan muffins, vegan brownies, granola, crackers, breads, fries, plantin, trail mix, luna bar, chips or veggies and dip.

    Sandwhich ideas:

    Tofurky or Lightlife deli-slices with hummus, or mustard, or vegan mayo, or other spread, with veggies on sliced bread, sub bread, or pita bread. Or just hummus or vegan mayo or other spread with veggies and/or fruit. Also peanut or almond butter with fruits and/or veggies such as bananas, avocado, apples, strawberries, carrots, cauliflower, broccoli, blueberries, etc. Hummus with shredded carrots and celery with a flour tortilla or pita bread. Falafel with carrots, sprouts and hummus is good. Potato salad or chickpea salad or vegan chicken salad or vegan tuna is good. Tempeh bacon, tvp crumbles, or seitan slices or chunks sand veggie sandwich's. Beans and a spread with sprouts and other veggies on a pita bread is good. Vegan cream cheese with veggies. Rice, avocado and peanut butter. Avocado and lettuce are almost essentials in most of my sandwiches!
