Im baking dinner for my second date tonight what salad would go good with it?

im baking some salmon fillets for her and her 2 year old son, but im not sure what to make with it

  1. I would go with a cesar salad and rice pilaf.

    Herbed Rice Pilaf

    INGREDIENTS

    2 cups uncooked long grain rice

    1 cup chopped celery

    1/2 cup chopped onion

    1/4 cup butter or margarine

    4 cups chicken broth

    1 teaspoon Worcestershire sauce

    1 teaspoon soy sauce

    1 teaspoon dried oregano

    1 teaspoon dried thyme

    DIRECTIONS

    In a skillet, saute rice, celery and onion in butter until the rice is lightly browned and the vegetables are tender. Spoon into a greased 2-qt. casserole. Combine all remaining ingredients; pour over rice mixture. Cover and bake at 325 degrees F for 50 minutes or until the rice is done.

  3. When we have salmon I always love to have a simple Greek Salad with it.

    Red leaf or romaine lettuce

    Sliced red onion

    Sliced Cucumber

    Black or greek olives

    Sliced tomato

    Feta Cheese

    Salt & pepper

    To make dressing for this I use two parts fresh squeezed lemon juice to one part extra virgin olive oil and a little dried oregano.  The lemon and feta taste great with the salmon.

Green vegetables like broccoli or carrots are good and maybe a green salad.  I like to serve salmon with rice or pasta as a side dish because I always make a lemon-dill sauce for mine and the lemon-dill sauce goes so well with rice or pasta as well as the salmon.  Try making the sauce - it makes the salmon seem even classier and it's really quite easy to make!

    Lemon-Dill Sauce

    1 cup milk

    2 Tablespoons flour

    2 Tablespoons butter or margarine

    1 teaspoon salt

    1 teaspoon dill weed

    juice from one small lemon

    Heat milk in a saucepan until it begins to bubble.  In another pan or a small bowl melt butter and blend in flour & salt to form a smooth paste.  Carefully stir or whisk into milk and cook until mixture thickens into a smooth sauce.  Stir in dill weed & remove from heat.  Drip in lemon juice a little at a time, stirring well as you add.  Serve hot over fish or chicken.

    if so 1/2 cup olive oil,  1/3 package of Good Season Italian dressing mix  the juice of 2 lemon  and a tablespoon of orange juice concentrate  wisk well toss with romane lettuce and pramesean cheese maybe italian croutons maybe mandarine slices  

    you want clean and simple not to heavy with that fish

Mixed baby salad greens (in bag or box), with 1 can drained mandarin oranges,  thinly sliced red onion and carmelized sliced almonds (stirfry in about 3/4 c. sugar, until the sugar melts & coats the nuts).  Toss all with a good Balsamic vignarette .......  You could substitute the oranges with fresh raspberries or sliced strawberries, and substitute the almonds with pecans or walnuts, and then use Raspberry-Walnut or Raspberry-Pecan bottled dressing ..... (The 2-yr-old will like the fruit)

  8. just a regular tossed salad would be fine, maybe with some cherry tomatoes, cucumberr, broccoli, croutons, or sunflower seeds

    you could also have some steamed veggies and I would plan a back up for her two year old, unless you know he likes salmon, something like chicken nuggets, or whatever momsuggests

  9. I'd steam some broccoli, and have some cheese sauce handy for the little one--veggies always go down easier with cheese!  My son has loved salmon for as long as he's been on solid food, so that's a good call in my book.  Maybe roast some potatoes on the side?

  11. Steam some fresh green beans.  Or toss them in olive oil & roast them on a foil lined cookie sheet.  

    For a starch, what about long grain rice?  It's a cheat, but Uncle Ben's 90 second rice is really good! (and I am NOT a rice person)

  12. i would say that for the salad a Cesar salad...there so good and pretty simple.  rice pilaf would go good with salmon and maybe some mixed summer vegetables to go with it. make small portions so u can have room for dessert, dessert would be good like some pie or ice cream. and yes i would make sure the son likes salmon just to be on the safe side.  good luck on you re date !!.

  13. Rice pilaf or couscous would be delicious for a starch.  Steamed broccoli or zucchini for a veg.
