When you cook fruit you release the sugars in it, they seep out and surround the fruit, so it should bring out a pleasant flavour.

I think some fruits would taste very good if you were to cook them. Like pineapple! ^^

Stewed fruit tastes good if you have a sweet tooth. In Indian cooking babanas (both green and ripe) are frequently used in cooking - the former (green) tastes like chicken, apparently, and the latter is sweet and mushy. Apples are good cooked (like in apple pie).
